Loz’s Lemon Verbena Syrup for Ice Cream

INGREDIENTS

  • 4fl oz water
  • 1tsp arrowroot
  • 3oz sugar
  • 2 big handfuls lemon verbena (including stalks)
  • Vanilla ice cream

METHOD

  1. Put the water, arrowroot and sugar together into a pan and heat, whilst stirring until the sugar has dissolved and the liquid thickened.
  2. Add the lemon basil – stalks as well- roughly chopped.
  3. Allow the mixture to cool and then leave for 24 hours before straining.
  4. Drizzle over vanilla ice cream.
This goes a deep green colour and looks as though it should taste of mint.
