Stu’s Basil and Honey Chicken

Method Chop the lemon basil and add to honey. Smear all over chicken joints and leave to marinate overnight. Brown the joints in hot oil and then transfer to the oven at 180 degrees for 25 mins.

Rose Hip Syrup

Method Take approx 40g of hips, cut in half and scrape out the seeds. Add the hips to 1 pint of just boiled water and leave to sit overnight. Next morning, bring to the boil and simmer for 10 mins. Tony’s Salmon Wraps

Marinate salmon fillets over night in a mixture of chopped lemon basil, olive oil and black pepper. Wrap in Parma ham and bake in a hot oven for 10 minutes. Serve with a sprig of lemon basil.
