A perennial with an edible purple flower that appears in spring. It is also known as Rush-Leek after the Greek Skhoinos-Rush and Prason-Leek. Although found growing wild and used for centuries, it was not cultivated until the Middle Ages. Chives are rich in iron and excellent appetizer and digestive. They are good in vegetable dishes, omelettes, sauces and salads. Chopped into butter or cream cheese they are tasty on baked potatoes. The aroma is destroyed by lengthy cooking.
