This is a very striking white and green leaved horseradish. It will revert to a green plant for the first year after the roots have been disturbed but once settled will begin to grow back the variegation in the leaves. It can become invasive so grow it in a dustbin to keep it under control. Roots collected in winter can be used wherever a stimulant is needed for conditions such as flu and fever. It eases wind and griping pains and can be used as a poultice for rheumatism and bronchitis. Its best known use is grated into cream or vinegar to make horseradish sauce.
