This Southern European herb has a pungent flavour that works well in so many dishes and the fact it grows into a satisfying clump makes it an excellent culinary herb for the garden, either in the ground or a pot. Oregano is easy to grow either in a container or the ground. It is happy in most soil types but prefers a sunny spot and although it will manage some shade it may compromise flavour slightly. It can be left to get on with it for most of the year and will just need a haircut in late summer once the flowers have died, which will leave a good clump of leaves over winter. Oregano can be divided in autumn to make new patches elsewhere in the garden or to give to friends and neighbours.
This warm spicy herb is essential for inclusion in creamy pasta dishes, pizzas, bolognese sauce and marinades. The flavour of oregano is intensified by the sun and as it dries well, in the height of the summer when at its most fragrant and just before flowering, bunches of oregano can be hung in a warm place out of direct sun. Once dry they can be crumbled and stored in air tight containers for winter use in all the same dishes, but also try it added to home made bread.
