Jo’s Muffins

INGREDIENTS

Wet:

  • 150g self raising flour
  • 75g rolled oats
  • 1tsp mustard powder
  • 1tsp baking powder
  • ½ tsp bicarbonate of soda
  • A handful chopped chives
  • A bunch finely chopped lemon basil.

Dry:

  • 2tbsp tomato puree
  • 5tbsp oil
  • 75ml milk
  • 4 chopped tomatoes
  • 1 egg

METHOD

  1. Mix together the dry ingredients
  2. Then mix together the wet ingredients before adding them to the dry ingredients.
  3. Divide the mixture between muffin cases or a muffin tin and sprinkle 150g grated cheese over them.
  4. Bake at 180 degrees Celsius for 20 minutes.
